Our Vegan Dashi is handcrafted with natural ingredients including Rishiri kombu, shiitake and golden oyster mushrooms.
Rishiri kombu is a premium kelp harvested from the cold, clear waters around Rishiri Island in northern Japan. It creates a clear, elegant stock without bitterness and is widely used in Kyoto cuisine for its pure, delicate flavor.
Another key source of umami in our dashi is shiitake and golden oyster mushrooms sourced from a family-owned local farm. Golden oyster mushrooms, known as tamogitake (たもぎ茸) in Japan are prized for their bright golden color. They are nutrient-rich and offer a delicate, slightly nutty flavor.
Naturally rich in umami and entirely plant-based, our Vegan Dashi brings deep, satisfying flavor to any dish you create.
Available as dashi packets for easy brewing or as a loose powder for direct use as a seasoning.

HOW TO USE DASHI PACKETS

Make Dashi Stock
1. Place 1 packet (8 g) in 400–500ml water.
2. Bring to a gentle boil, then simmer for 4–6 minutes
3. Remove the packet. Add any condiments you like!

Use as a Seasoning
Tear open the packet and sprinkle over any dishes you like or add directly to soups for a richer flavor.
* Because our products are made with whole, natural ingredients, some particles may not fully dissolve. If you prefer a smoother texture, please remove any remaining bits or grind the powder finer.

[How to Store]

Before Opening
Store in a cool, dry place away from direct sunlight and heat. -
After Opening
We recommend resealing the bag tightly removing as much air as possible and store in the refrigerator. -
If a dashi packet is opened and not fully used
Keep the remaining powder inside the packet. Place it in an airtight container or resealable bag and store in the refrigerator. For best quality, use within 2 weeks.
Additional Notes:
- For Loose Powder, always use a dry spoon to prevent moisture from entering the bag.
- Because we use natural ingredients, the aroma and flavor may gradually change after opening. If you notice any unusual odor, color, or taste, please discontinue use.
